Sweet potatoes are a perfect side dish in the fall. Aromatic, in season, and comforting. As fries, they are the perfect accompaniment to your game-time fare of wings or burgers. Mine are baked, not fried—it’s just much easier using the oven and I am all about simplicity—but they are kicking with flavor.

~4 large sweet potatoes
~1T olive oil (or canola, saffron, veggie…whatever you fancy)
~1T sea salt
~2T black pepper
~2T cayenne pepper sauce
~1tsp. red pepper flakes
1. Bring a large pot of water to a boil. Drop in sweet potatoes and boil until soft enough to cut, but not mushy (~30 minutes, depending on your stove). Preheat oven to 350 degrees.
2. Peel skins (or leave on—I like to cook mine separately as in photo) and slice potatoes into fry shapes or any shape you desire. Place into a foil-lined pan.
3. Season fries evenly with olive oil, sea salt, pepper, red pepper flakes, and cayenne pepper sauce.
4. Bake in the oven at 350 degrees until they start to brown, approximately 20 minutes.
