Pizzetta

One of my favorite, go-to, hard-to-fail crowd-pleaser meals is pizzetta. I make many varieties; only a few are pictured. (More pics to come!) They can take as little as 10 minutes or as long as 40 minutes to make, depending on your toppings. You can use just about anything in your fridge.

Start with a ready-made pie crust. Pillsbury makes one, but I usually buy the store brand because they are the same. Two rolled up crusts come in one package, and they can be found in the refrigerator section of the grocery store near the dairy products. I prefer to use disposable tin pans (9×11″, 1-inch deep), as these are usually for transporting to parties and this makes the clean-up easy.

The instructions for each are pretty much the same:

*Unroll the pie crust and make it fit to the tin. (It comes in a circle but will need to be made square for my version. Conversely, if you want to make this round and use a pie pan instead, that works equally well. Just make sure it is aluminum/tin/dark material, rather than, say, glass or porcelain.)

*Add toppings

*Pop in oven at 375° for 12 minutes (this varies slightly depending on oven and toppings)

Here are the versions I’ve created:

◊ Fig~Beet~Apple~Blue Cheese


◊ Sliced on-the-vine tomatoes~shaved Gouda~herbs de provence (sauceless)

◊ Roasted peppers~sauteed onions (both pre-prepped)~paprika~ red pepper flakes

◊ Arrabbiata sauce~sliced sweet Italian sausage (pre-cooked)~fresh mozzarella~oregano (not pictured)


◊ Balsamic & olive oil-marinated sliced baby portobello mushrooms (pre-prep)~grated parmesan (sauceless)



◊ Black beans~salsa (with corn and black beans)~ shredded Mexican 4-cheese blend (mild cheddar, monterey jack, queso quesadilla)~jalapenos~olives (not pictured, much like the Nasty Nachos)

◊ Vodka sauce~basil~fresh mozzarella


◊ Spinach~artichoke~ricotta~crushed garlic~salt~pepper (sauceless, not pictured)

◊ Goat cheese~spinach~onions~bell peppers~tomato~kalamata olives (sauceless)
